Why NovaVer exists

NovaVer started with a simple frustration: most of what's sold as a "superfood" today is a single molecule, pulled out of context and dropped into a capsule. We wanted to do the opposite — take a whole young plant, at the moment it's most nutrient-dense, and preserve it as closely as possible to how it grows. Not extracted. Not isolated. Whole.

Why Quebec

We work with local microgreens growers in Quebec, harvesting close to processing. Keeping the supply chain short and local isn't just a values statement — it's part of how we protect freshness before freeze-drying even begins.

Why freeze-drying, specifically

Freeze-drying is slower and more energy-intensive than heat-drying. We don't hide that trade-off. What it gives us in return is a gentler process for heat-sensitive compounds like myrosinase — the enzyme that activates sulforaphane's precursor in broccoli. For us, that trade-off is worth it.

What we're focused on

We're a food company, focused on the whole plant rather than an isolated compound. We talk about what researchers have found, and we let you draw your own conclusions. For us, the starting point is the plant itself — and what careful research can teach us about it.

Where we're headed

Broccoli microgreens are our starting point, not our whole story. As we grow, the plan is to bring the same whole-food, freeze-dried approach to other vegetables — always vertically integrated, always processed close to where it's grown.
